Hi. I went through customizing our shop's email to match a bit more to what our website looked like. After a long session of trying to edit the CSS in the Email Template, I am experiencing a problem of having my text default to Times New Roman. When I set the entire body and content areas to Font-Family: Arial, and insert a Token such as SHIPPINGADDRESS or SUBTOTALS, the actual email in the Inbox shows the font as Times New Roman. Is there any way to fix or counter this? I want my email template to look professional and in sync.

Which email client are you using? Email clients are behind the times when it comes to interpreting html. Browsers do a much better job. In order to make the emails look good in all email clients the html in your email template should be as basic as possible. Additionally, use the following link to see what html elements are supported in which email clients.
