Hi Jonathon,
Have you configured your settings in your shops BuyNowSettings?
Find your Manage Cart Settings Icon (blue one on the Catalog page)
Go to the Cart & Checkout collapse panel and open it. Inside there should be a category that says Hide Fields. Uncheck the box next to Hide Quantity and click Save Settings at the bottom of that page.
Also when you manually add or edit each product, Add Products or Manage Products, under the Product Options collapse panel, uncheck the box next to Hide Quantity.
Once both are unchecked, you should see a form field in your Checkout screen where your customers can change the quantity of the products they are purchasing.
