When I add manually an order and select the customer why are the shipping en billing details not automatically filled?

Are you talking about auto populating ship and billing details when you manually add an order from the order admin page?

On the front end checkout we auto populate based on the logged in user. In the order admin page you are logged in as an admin so where do you want the info auto populated from?
